Our winemaking procedures are based on expertise, experience and tradition. Due to our state of the art winemaking equipment and traditional winemaking procedures inside the restored historic arched cellars from the 17th and 18th centuries, our wine matures to its highest quality. Maturing wine is mostly kept in ordinary barrels and 225-liter barrique barrels made of Slovene oak, which is praised throughout the world.
Vinification and Fermentation: in temperature-controlled stainless barrels, natural yeast without SO2 Maturing: 45% in wooden barrels up to 2000 liters 45% in wooden and stainless steel barrels 10% Barrique (Chardonnay; Blue Burgundy) 30%-30%-30% 1-2-3 years old Barrique barrels) Disacidification: Biological disacidification; red wines always, white wines if necessary
All our wines originate from officially controlled harvesting and are always classified as high-quality or high-quality with predicate. The control and monitoring is performed by the Agricultural Institute of Slovenia and Consulting Company Schneider Enology from Bingen, Germany. Enologist and international expert wine publicist Volker Schneider is also our consultant and Quality Management supervisor in our cellar.
